Taste Profile: The alcohol, although at 14.5%, does not play a dominant role at all, but rather hides. The acidity and extract balance this perfectly into a lean and at the same time quite creamy, caramelly, brioche-laden wine. Quince and baked apple on the nose, star fruit, anise, a bit of lavender, even a hint of juniper, flower meadow. This 2007 is an extreme charmer. The dreamlike, juicy, charming tartaric acid balances all the aromatics, all the floralness, caramelness, perfectly.
The whole thing ends long and yet always remains extremely charming and creamy. Shows wonderful fullness, the slight viscosity and the amount of glycerine caused by the alcohol also contribute a lot to this. We have fine botrytis aromas and an extremely stimulating petrol note.

Blanc de Noir (French literally: “white from black”) is the French name for a white wine made from red wine varieties. The term has not yet been defined in German wine law, but is also not objected to the illusion of white wine.
Grape Varietals & Region:100% Pinot Noir from Ahr, Germany. The secret of the Ahr wines is based on a perfect microclimate, which is created by the geological conditions. The steep, south-facing vineyards offer optimal exposure to the sun. The predominant weathered soils of slate and greywacke are easily warmed and are able to store this heat. The narrow valley, protected by the Eifel mountains, heats up quickly and offers the vines an ideal habitat.
Taste Profile: It is rich in nuances, with a play of aromas of pear, apple, yellow peach and an elegant minerality. The partial malolactic fermentation softens the acid slightly and allows the melty aromas to develop.
Winemaking Process: The grapes are picked by hand and carefully transported to the winery in small boxes. The production takes place in the same way as the champagne base wine. Red grapes are pressed into the press as whole bunches (i.e. not destemmed and mashed). With gentle pressure, only the bright, clear juice inside the berry is extracted. The must pressed in this way is then fermented cool like a white wine and then subjected to malolactic fermentation. The cooled and controlled fermentation takes place in stainless steel tanks and a small percentage in barriques. After several weeks of storage on the fine yeast, bottling takes place after approx. 6 months. The “Illusion” is a white-pressed Pinot Noir.

In previous years, their drinking wine for daily enjoyment came regularly from the Ayler Scheidterberg. Unfortunately, this vineyard name has disappeared. They did however, want to stay true to tradition and name their lightest Riesling after this vineyard.
Taste Profile: It is mineral-fresh and with an exciting bouquet of wild yeasts Archetype of the animating Saar Riesling.
Grape Varietals & Region:100% Riesling, from slate slopes in Ayl, Saar, Germany
Taste Profile: Tapas, salted almonds, and parmesan on the table. In addition, our mash-fermented N° 2 offers a grippy, slightly melty texture. Exciting nutmeg notes fill the warm bouquet. It is a full-bodied and mildly acidic but – with ambient yeasts – dry-fermented wine with only 2 g/l residual sugar. A wine that cuts a fantastic figure with strong or salty-spicy dishes.
Winemaking Process: The fruit is mash fermented & undergoes wild yeast fermentation, followed by barrel ageing on lees
Grape Varietals & Region: 100% Riesling. This would be coming from the eastern slopes of Scheidterberg and Rauberg, it reflects the spicy side of the Ayler Riesling terroir
Taste Profile: The 25th cask in the cellar is their high-quality Ayler Ortswein (village wine). N° 25 impresses with fine herbal and saline notes. That is why we recommend this wine with Mediterranean-style dishes.
It doesn’t always have to be Pinot Grigio… For lovers of the milder but dry taste, we recommend this fine Ortswein, or village wine.

Aromatic, juicy, vibrantly fine, your all rounder white. Present on the nose are aromas of green apple and citrus twang. Barely off-dry and textured, the palate oozes flavors of lemon, wet slate, green apple skin, and white flowers. This is one of the estate’s greatest value and so will it be amongst your wine stash.
Grandfather Peter Lauer I (1906-1991) used to enjoy a bottle of Riesling every day. It smelled wonderful, tasted dry but well balanced with a hint of fruit on the tongue. Every year he chose a barrel from the Ayler Kupp. He placed particular emphasis on a single wine for all his guests, which both the dry drinker liked and the lover of fruity drops delighted. As a tribute to this famous “senior” wine, we vinify a worthy successor every year that the grandfather should taste.

The most finely weathered stones collect here due to the erosion from rain. The small fragments are available to the vines as a source of minerals
Taste Profile: The long-lasting dryish wine comes from old vines and is dense, exciting, and always a little salty on the palate. It tends to be one of the broadest and most powerful of Lauer’s dry wines. Because of the ample water, it has a mineral expression that is multifaceted, complex, deep
It has a beautifully complex and smoky nose of candied lime, grapefruit zest, smoky bacon, ginger, almond, yuzu, and white flowers. The wine is superbly playful and refined on the palate, where some light creamy and juicy elements make for an appealing touch. The finish is beautifully spicy and herbal and already fully dry.
Grape Varietals & Region: 100% Riesling sources from the top of the Kupp mountain in the Saar region, Germany. Stirn is located high up Ayler Kupp. Optimally oriented to the south and steep, the Riesling vines catch a maximum of sunrays here. The ground is littered with coarse slate stones and is shallow. The water flows rapidly down into the valley. The vines, therefore, have to be deeply rooted in the rock to give the old vines with their small berries extract. Given it's unique microclimate, it tends to be harvested earlier than other plots within the Saar
Taste Profile: An off-dry Riesling, it has a high acid profile, and it's linearity gives it a dry finish. t reveals a fully aromatic and appealing nose of yellow fruits (pineapple, Conference pear, and quince), candied grapefruit, tangerine, green apple, anise, oriental spices, and smoke. The wine proves fully off dry on the palate as plenty of sweet and ripe fruits come through. The finish is structured and has more mineral elements with zesty and minty elements.

It proves quite reduced and smoky at first, and needs quite a moment to reveal creamy notes of almond, ripe vineyard peach, greengage, lemon, herbs, and spices. The wine is light-weighted on the palate, and while the acidity feeling is on the low side, there no excessive sense of smoothness and the wine proves nicely balanced, so that the residual sugar is already well integrated and seems far lower than the analytic numbers would suggest. The finish is long, sappy, and superbly refreshing, with even great tension and freshness despite all the elements at play.
At the turn of the 20th century, when Saar wine was unimaginably expensive, tobacco manufacturer Kern, from Saarlouis, owned a piece of vineyard land in Ayler Kupp. The vines are 70 years old today. After the sun has finished its work on the hot slate stones during the day, the coolness rises up the hillside from the marsh below and noticeably lowers the temperature. This interplay of scorching heat during the day and coolness at night is the secret to the intense aromatic expression of this off-dry wine.
""Kern"" is named after the 19th century industrialist that cleared this more-western part of the Kupp; it is a small parcel that spans the entire top-to-bottom reach of the Kupp. Thus, for me, the wine always has something of the lift and rigor of ""Stirn"" and something of the depth of wines like ""Neuenberg"" and ""Unterstenberg."" The vines are old here, well over 70-years-old, so the wine has some stuffing. It is most often well in that off-dry style, yet, with Lauer, it's always about the balance.-Vom Boden

Taste Profile: Lauer’s Schonfels GG Fass 11 is deep, intense and pure on the still yeasty nose that exhibits ripe fruit intertwined with herbal/floral and stony aromas. Crystalline and lean on the palate and with enormous length, this is a pure and refined, vegetal-flavored dry Riesling with remarkable finesse and tension. More classic maybe than the richer van Volxem.

Due to its topography and south-southwest exposure, Domprobst gets plenty of sunlight and is well protected from cold winds and frosts. The warming of the stony, argillaceous slate soils cause a uniform and full ripening of the grapes. The grapes are hand-harvested, gently pressed whole cluster, and spontaneously ferment and age in large old Fuder barrels.
